Why This Recipe Shines
This Tofu with Minced Pork recipe encapsulates the essence of comfort food, offering a harmonious blend of textures and flavors. It demonstrates how tofu, often underestimated, can serve as the perfect canvas for the rich umami of pork and the aromatic depth of shiitake mushrooms. Moreover, this dish is not only a celebration of plant-based protein but also a showcase of how simple ingredients can come together to create a meal that's both hearty and wholesome.

Ingredients

To recreate this comforting dish, you'll need:

  • Main Ingredients:

    • 1 box of tofu

    • 200g ground pork

    • 3 large dried shiitake mushrooms, rehydrated

    • 15g minced garlic

    • 15g white scallions

    • 7g crispy scallions

  • For the Sauce:

  • 1 Tbsp soy sauce

  • 1 Tbsp rice wine

  • 1 Tbsp oyster sauce*

  • Seasonings:

  • 250c.c. mushroom water (from rehydrating shiitake mushrooms)

  • 1/2 tsp sugar

  • A dash of white pepper

  • Garnish:

    • green onions and chili peppers

* What is oyster sauce: Oyster sauce is a staple in Asian cuisine, known for its rich, savory flavor. Originating from China in 1888, it's created by simmering oysters until their juices caramelize into a thick sauce, often sweetened to balance its salty, umami taste. Essential in stir-fries, marinades, and sauces, oyster sauce adds depth to dishes with its complex flavor profile. Vegetarian versions use mushrooms to achieve a similar umami quality, making it versatile for various dietary preferences.

Instructions

Steps to Deliciousness:

  1. Tofu Prep: Start by pressing the tofu with a heavy object on a paper towel to remove excess water. Then, cut it into 12-18 pieces.

  2. Pan-Fry Tofu: Heat some oil in a pan and fry the tofu until golden brown on both sides, approximately 4 minutes per side. Remove the tofu and set aside.

  3. Cook the Pork: In the same pan, cook the minced pork until it turns white. Add the minced garlic, white scallions, and crispy scallions, sautéing over medium heat for 2-3 minutes.

  4. Add the Sauce: Incorporate the sauce ingredients, rehydrated mushrooms, and mushroom water, stirring well to combine.

  5. Simmer: Return the tofu to the pan, bring to a slight boil, then reduce the heat to medium-low, cover, and let it simmer for 15 minutes.

  6. Garnish and Serve: Finish the dish by sprinkling with freshly chopped green onions and chili peppers for an extra kick of flavor.
