  • 3 tablespoons of Taibai (cornstarch) powder

  • A pinch of white pepper

  • For the Sauce:

  • 3 tablespoons mirin

  • 2 tablespoons soy sauce

  • 1 tablespoon sugar

  • Additional:

  • 1 tablespoon salad oil

  • 2 tablespoons of wine

  • Mushrooms, to taste

* Flat tofu, also known as "pressed tofu" or "firm tofu," refers to tofu that has been pressed to remove a significant amount of water, resulting in a denser and firmer texture compared to regular tofu. This process not only changes the tofu's physical properties, making it more compact and sliceable, but also enhances its ability to absorb flavors from marinades, sauces, or spices it's cooked with. Flat tofu holds its shape well during cooking, making it an excellent choice for frying, grilling, baking, or in dishes where a more substantial texture is desired, such as in the Teriyaki Tofu Burger recipe.
