There's something about Taiwanese Salted Crispy Chicken that takes me back to my college days. It was the luxury option for a late-night snack, a fragrant and savory treat that we coveted at the end of each month. Back then, choosing between Baiye Tofu for 25 yuan and the irresistible crispy chicken for 55 yuan was a gourmet dilemma. Fast forward to today, and while the prices might have changed, my love for this dish remains steadfast. Thanks to my air fryer oven, recreating this beloved snack at home has become a delightful and easy endeavor, offering all the crispy goodness without the need for deep frying.

A Brief History of Taiwanese Popcorn Chicken

Taiwanese Popcorn Chicken, or Yan Su Ji (鹽酥雞), originated from the vibrant night markets of Taiwan, becoming a staple snack by the late 20th century. It marries traditional Chinese cooking methods with Taiwanese flavors like five-spice powder and basil, creating its unique taste and crispy texture, thanks to the use of sweet potato flour. Initially designed for easy snacking on the go, this dish reflects the essence of Taiwanese street food culture with its bite-sized, flavor-packed pieces. Over time, it has evolved with various local twists while maintaining its core characteristics. Today, Taiwanese Popcorn Chicken enjoys global popularity, embodying the rich culinary heritage of Taiwan and its influence on international street food scenes.

Ingredients

This recipe uses simple ingredients to bring out the authentic flavors of Taiwanese street food:

  • 1 chicken breast or fillet, diced

  • Sweet potato powder, for coating

  • basil or coriander (optional)*

  • Marinade:

  • 1 tablespoon minced garlic

  • 1 teaspoon minced ginger

  • 1.5 tablespoons soy sauce

  • 1 tablespoon rice wine

  • 1/4 teaspoon white pepper

  • 1/4 teaspoon 13-spice powder

  • 1/2 whole egg

  • 1/2 tablespoon sugar

  • 1 tablespoon corn flour

* Basil and coriander add a fresh, aromatic quality to the dish. Basil brings a sweet, slightly spicy flavor, while coriander offers a citrusy, earthy note. These herbs contrast with the savory, spiced chicken, creating a more complex taste experience.

Instructions

How to Make Your Own Taiwanese Popcorn Chicken:

  1. Prep the Chicken: Begin by scoring the chicken slices slightly on both sides to enhance marinade absorption, then cut into cubes.

  2. Marinate: Mix the chicken with the marinade ingredients until well coated and the marinade is fully absorbed.

  3. Coat in Sweet Potato Powder: After marinating for 30 minutes, coat the chicken pieces evenly with sweet potato powder.

  4. Let It Rest: Allow the coated chicken to rest briefly, ensuring the sweet potato powder fully adheres to the chicken.

  5. Bake to Perfection: Arrange the chicken on a baking sheet, lightly drizzle with olive oil, and sprinkle with basil or coriander. Bake at 320°F for 7 minutes, flip, and then bake at 390°F for an additional 5-6 minutes until crispy.

Additional Tips- Serving Suggestion

As a nod to my love for aesthetics, I serve this dish in a beautifully shaped bowl from Ikea, which not only elevates the presentation but also adds to the enjoyment of this homemade delicacy.

Creating this dish at home not only satisfies my cravings but also brings a piece of Taiwanese street food culture into our dining room. It's a testament to how food can transport us back in time and across continents, all from the comfort of our kitchens.
